    Watermelon Muffins

    List of Ingredients

    1 1/2 c. flour
    2 tsp. baking powder
    1 tsp. baking soda
    1 pinch salt
    1/8 tsp. cinnamon
    1/2 c. watermelon juice
    1/2 c. watermelon pulp
    6 tbsp. butter, room temperature
    2/3 c. sugar
    1/2 c. milk
    1/2 c. raisins
    2 eggs

    Recipe

    Preheat oven to 350. Grease and flour a muffin tin or coat with non stick cooking spray.
    Sift flour, baking powder, baking soda, salt and cinnamon in a large bowl. Set aside.
    Cream butter and sugar together until fluffy.
    Add eggs to the sugar mixture.
    Combine flour mixture and sugar mixture.
    Whip milk, juice, pulp and raisins together.
    Add juice mixture to rest of ingredients, blending well.
    Bake approximately 25 minutes. Transfer to wire rack to cool.
