    Zesty Cheese Muffins

    List of Ingredients

    1 1/4 c. flour
    3/4 c. cornmeal
    2 tbsp. sugar
    2 tsp. baking powder
    1/2 tsp. chili powder
    1 c. milk
    1/4 c. oil
    1 egg
    1 11oz. can Mexican corn, (with red and green peppers), drained.
    2 c. fresh sharp Cheddar cheese, shredded or small cubes

    Recipe

    Preheat oven to 400. Grease mini or regular size muffin pans.
    Combine the flour, cornmeal, sugar, baking and chili powder together.
    Stir in the milk, oil and egg mixing just until the dry ingredients are moistened.
    Stir in the corn and cheese.
    Spoon into the tins, filling almost full.
    Bake for 9 - 11 minutes for the mini muffins, 15 for the regular muffins or until a tester comes out clean.
    Cool for 5 minutes, then remove from pan.
    Makes 36 mini muffins or 12 regular muffins.
    Can be made ahead and frozen.
