Bowtie Pasta with Cheese Sauce

List of Ingredients
1, 16 ounce package bowtie pasta
1 cup lightly packed basil leaves
3/4 cup packed mint leaves
1, 10 3/4 ounce package frozen chopped spinach,
...thawed and squeezed as dry as possible
1/2 cup freshly grated Parmesan cheese
2 tablespoons softened butter
2 minced garlic cloves
1 1/4 teaspoons sea salt
1/2 teaspoon freshly ground black pepper
6 - 8 ounces medium Cheddar or Monteray Jack cheeseRecipe
Cook pasta al dente to package directions, or to taste, set aside
1 or 2 tablespoons of the cooking water.
Combine the basil, cilantro, spinach, Parmesan, butter, garlic, salt
and pepper in a blender/food processor and blend until smooth.
Add the Cheddar cheese and blend until well mixed with the rest
of the ingredients.
Combine the hot pasta with the blended ingredients and the saved
cooking water in a large bowl. Toss until the pasta is coated well.
