    Caramelized Vidalias + Angel Hair Pasta

    3 - 4 Vidalia onions
    2 tbsp. butter (margarine will work, but butter is better)
    1/4 c. light brown sugar
    2 - 3 cloves thinly sliced fresh garlic, optional
    angel hair pasta
    1 tsp. dried chives
    freshly grated Parmesan cheese

    Recipe



    Peel and slice your onions as thin as possible.
    Melt the butter in a saute pan.
    Add the onions.
    Turn the temperature to low and cover. You will be 'sweating' the onions.
    Add the garlic and let cook for about 10 - 12 minutes.
    Lift the lid and give everything a gentle stir.
    Add the brown sugar and stir again.
    Cook until the onions are translucent.
    Remove cover and continue cooking to let the liquid reduce.
    Cook the pasta al dente to package directions.
    Add the chives with the angel hair as it is cooking.
    Drain the pasta well, and toss with a bit of olive oil.
    You can either mix the pasta and onion sauce together or serve the onions on top.
    Sprinkle with the Parmesan cheese or sprinkle the cheese on before placing the onions on top if you are eating it that way..
    Serve with a salad and breadsticks and marinara sauce on the side.
