Lasagna RollUps, w/sausage
16 lasagna noodles
1 1/2 pounds ground pork sausage, (may use hamburger)
1 medium onion chopped (1/2 c.)
1 beaten egg
1 cup Ricotta or cream style cottage cheese
1/2 cup grated Parmesan cheese
1/4 cup snipped parsley
1 teaspoon dried basil, crushed
1 cup shredded Mozzarella cheese (4 oz.)
2, 8 ounce containers spaghetti sauce
1/4 cup dry red wine (opt.)
In a large kettle or Dutch oven cook lasagna noodles in a large amount
of boiling salted water for 10 to 12 minutes or until just tender.
Drain well. Rinse noodles with cold water; drain.
In skillet, cook ground pork and chopped onion until meat is browned
and onion is tender. Drain off fat.
In bowl combine egg, Ricotta cheese, Parmesan cheese, parsley and basil;
stir into meat mixture.
Spread each lasagna noodle with about 1/4 c. of the meat-cheese mixture.
Roll up each jelly roll style.
Place seam side down in a greased 13x9x2 inch baking dish.
Sprinkle Mozzarella cheese over rolls.
Combine the sauce and red wine; pour over cheese.
Cover with moisture-vapor proof wrap.
Seal, label & freeze.
Before serving:
Bake, covered, in a 400 degree F. oven for about 1 1/4 hours or until
heated through.
Makes 8 servings.
