    Onion Smothered Pasta

    Onion Smothered Pasta

    3 c. uncooked ziti type pasta, (10 1/2oz.)
    2 tbsp. olive or vegetable oil
    2 c. onions, cut into 1/4" slices, (4 medium)
    1/2 c. beef broth
    1/4 c. apple juice or dry red wine
    1 tsp. dried basil
    1 tsp. dried oregano
    1 8oz. can tomato sauce

    Cook and drain pasta as directed on package, omitting the salt.
    Heat the oil in a 3 quart non stick saucepan over a medium heat.
    Cook the onions in the oil for 8 - 10 minutes, stirring from time to time, until the onions are tender.
    Stir the broth, juice, basil, oregano and tomato sauce in. Heat until hot.
    Drain the pasta and serve with the onion sauce over top.
    Makes 6 servings.
    May sprinkle with additional oregano or Parmesan cheese if desired.
