6 slices bacon, cut into small pieces
3 diced onions
2 diced red sweet bell peppers
2 diced green sweet bell peppers
1 pound finely chopped mushrooms
1/2 cup butter, (1 stick)
3 beaten eggs
1 pound thin spaghetti or linguini
grated Parmesan cheese
In a large skillet, saute bacon first. Spoon out bacon into a strainer to
drain off fat into a dish. Then saute onions, peppers and mushrooms in
fat. Set aside.
Cook pasta al dente to package directions. Drain and reserve 1 1/2 cups
of the water. Return pasta to pot. Add the reserved water and heat on a
low flame. Add butter and eggs, stirring constantly. Add 1/2 of the bacon
mixture. Pour into a large platter. Top with remaining bacon mixture and
sprinkle with cheese.
