Pasta w/Amatrice Sauce
2 Tbs (30 ml) olive oil
3 cloves garlic, finely chopped
1 small onion, chopped
1/4 cup (60 ml) dry white wine (optional)
1 28-oz (794 g) can tomatoes (preferably
Italian plum tomatoes), drained and chopped
1 tsp (5 ml) sugar
1 tsp (5 ml) chili powder
1 tsp (5 ml) paprika
1 tsp (5 ml) dried basil
1/2 tsp (2 ml) dried oregano
1/4 tsp (1 ml) cinnamon
Salt and freshly ground pepper to taste
1 lb (450 g) dried pasta, such as penne or
mostaccioli, cooked al dente
Freshly grated Parmesan cheese for garnish
Heat the oil in a large sauce pan over medium heat, and saute the
garlic and onion for about 5 minutes, stirring frequently, until the
onion is softened. Add the optional wine, tomatoes, and spices, and
bring to a boil. Reduce the heat and simmer uncovered for 15 minutes.
Ladle the sauce over the cooked pasta and serve with grated Parmesan
cheese. Serves 4 to 6.Recipe
