    Skillet Lasagna

    1/2 pound wide egg noodles
    1, 16 ounce container Ricotta cheese
    1, 10 ounce package frozen creamed spinach,
    ...thawed + squeezed dry
    1, 32 ounce jar extra-meaty spaghetti sauce
    1, 8 ounce package shredded pizza cheese blend
    ...(Mozzarella and Provologne mix)
    1/4 cup grated Parmesan cheese

    Cook noodles for 8 minutes, following package directions. Drain.
    Meanwhile, in small bowl, mix together cheese and spinach.

    Spread 1 cup pasta sauce over bottom of 12 inch skillet.
    Evenly arrange 1/3 of cooked noodles over sauce.
    Spoon 1/2 remaining sauce over noodles.
    Top with another 1/3 of noodles.
    Spread Ricotta + spincach mixture over noodles.
    Sprinkle 1 cup cheese blend over that.
    Top with remaining noodles, and spread with remaining sauce.

    Cover skillet.
    Bring to rapid hard simmer over high heat.
    Reduce heat to medium; simmer 10 minutes.

    Sprinkle remaining cheese blend and grated Parmesan over top.
    Cover and simmer 2 minutes.
    Remove from heat; let stand 10 minutes.
    Makes 8 servings.
