Spaghetti Carbonara #1
1 pound thin spaghetti
8 slices bacon, cut into 1/2 strips
1/4 cup Olive oil
1 medium onion, chopped
4 Tablespoons butter, cut into small pieces
1/2 cup chicken broth
1/8 teaspoon salt
1/4 teaspoon ground black pepper
2 eggs, slightly beaten
1/4 cup chopped parsley
1 cup grated Parmesan cheese
Cook spaghetti al dente to package directions.
Cook and drain bacon.
Heat oil in skillet. Add onion. Cook 5 minutes.
Add butter, broth, salt, and pepper. Cook 2 minutes.
Stir in eggs, cooking until sauce thickens.
Add pasta and toss with sauce in skillet.
Add parsley, cheese, then bacon.
