Spaghetti Carbonara #2
1 pound package spaghetti pasta
1/2 pound bacon, diced
1, 10 ounce package frozen peas, thawed
...or I'd use leftover cooked ones
2 cups Alfredo sauce, (recipe below)
Cook spaghetti al dente to package directions; drain.
Meanwhile, in a large skillet, saute the bacon over medium
heat for 2 minutes, or until crisp.
Add the spaghetti, peas, and Alfredo sauce to the skillet.
Toss to coat well.
Cook for 5 minutes, or until heated through, stirring
occasionally. Serve immediately.
Makes 6 to 8 servings.
Alfredo Sauce:
1 pint (2 cups) heavy cream
1/2 cup (1 stick) unsalted butter, softened
1 cup freshly grated Parmasaen cheese
freshly cracked black pepper
freshly chopped parsley, for garnish (if desired)
Heat cream over low/medium heat in a deep saute pan.
Add butter and whisk gently to melt.
Sprinkle in cheese and stir to blend.
Season with pepper.
Gently toss the pasta to coat in the Alfredo.
Transfer pasta to a warm serving bowl.
Top with more grated cheese, cracked pepper and
parsley. Serve immediately.
SERVING SUGGESTION:
Top each serving with shaved Parmesan cheese and freshly ground
black pepper.
