    Stuffed Shells #5, w/sausage+cheese

    1, 12 ounce box Jumbo shells
    1 pound breakfast sausage
    2 pounds Ricotta cheese
    12 ounces shredded Mozzarella cheese
    1/2 cup grated Parmesan cheese
    1/2 medium sweet onion, diced
    1 large egg
    1 teaspoon dried oregano
    1 teaspoon dried basil
    1 teaspoon dried parsley (save some for garnish)
    salt and pepper to taste
    1 Tablespoon Olive oil
    1, 10 ounce package frozen spinach (optional)
    ...thawed and squeezed dry very well
    1, 28 ounce container marinara sauce

    1. Boil shells according to box directions, drain and rinse
    under cold water, set aside.
    2. Brown sausage, drain grease, and put in bowl big enough
    to handle all the ingredients.
    3. Sautee onion and add to sausage along with the Ricotta
    cheese, half the Mozzarella, egg, spices, 1/4 cup of the
    Parmesan cheese and thawed spinach. Mix well.
    4. Grease the bottom of a 13x9x2 inch pan with the Olive Oil.
    Stuff the shells about 1 1/2 Tablespoons each and place
    in the pan.
    5. Pour marinara sauce over the shells.
    Spinkle the top with the remaining Mozzarella and Parmesan
    cheeses.
    6. Cover with foil and bake at 350 degrees F. for 30 minutes.
    Let stand a few minutes before serving.

    Serve with a Italian Bread and Salad for a great family meal!

    To Freeze Individual Shells:
    With no sauce, place shells on cookie sheet.
    Place in freezer until frozen.
    Than place shells in a freezer bag and return to freezer.
    Take out as needed.
