    :Pie Crust #8, cream cheese

    2 tbsp. butter
    2 tbsp. low fat cream cheese, (1oz.)
    2 tbsp. white sugar
    1 tsp. vanilla extract
    1 tbsp. low fat milk
    1 large egg YOLK
    1 c. flour, lightly spooned into the cup, not packed
    1/4 tsp. baking powder
    1/4 tsp. salt
    non stick cooking spray

    Combine the butter, cream cheese, sugar and vanilla together in a
    bowl and beat until smooth. Add the milk and egg yolk and beat until
    well blended.
    In a small bowl, mix the flour with the baking powder and salt.
    Add the flour mixture to the cream cheese mixture. Stir to well blended.
    Press the dough gently into a 4" circle on heavy duty plastic wrap.
    Cover with additional piece of plastic wrap. Chill for 15 minutes.
    Roll the dough, still covered, to an 11" circle. Place the dough in the
    freezer for 5 minutes or until the plastic wrap can be removed easily
    Remove 1 sheet of the plastic wrap. Coat a 9" pie plate with non stick
    cooking spray. Place the dough, plastic wrap side up, into the pie plate.
    Makes 1 pie crust.
