    Luscious Strawberry Pie

    Recipe Introduction


    This is a recipe my aunt received from my grandmother and it was many years before she would share it with the rest of us...and it is really so simple!


    List of Ingredients


    • 1 quart fresh strawberries, cleaned, hulled, strained dry
    • (measure out 1 c. of strawberries and set aside)
    • 2/3 c. + 1/3 c. water
    • 1 c. white granulated sugar
    • 3 tbsp. cornstarch
    • 1 baked pie crust


    Instructions


    1. Put the 1 c. strawberries, sugar and 2/3 c. of the water in a large saucepan and simmer for 10 minutes.
    2. Add cornstarch to remaining 1/3 c. water and stir together.
    3. Mix cornstarch mixture into cooked strawberries; stirring constantly until thick and clear.
    4. Remove from heat and let cool very slightly.
    5. Add the remaining strawberries to cooked mixture and stir LIGHTLY to cover all strawberries.
    6. Pour into pie crust and let cool. Then refrigerate.
    7. Serve with whipped cream if desired.
