Luscious Strawberry Pie

Recipe Introduction
This is a recipe my aunt received from my grandmother and it was many years before she would share it with the rest of us...and it is really so simple!
List of Ingredients
- 1 quart fresh strawberries, cleaned, hulled, strained dry
- (measure out 1 c. of strawberries and set aside)
- 2/3 c. + 1/3 c. water
- 1 c. white granulated sugar
- 3 tbsp. cornstarch
- 1 baked pie crust
Instructions
- Put the 1 c. strawberries, sugar and 2/3 c. of the water in a large saucepan and simmer for 10 minutes.
- Add cornstarch to remaining 1/3 c. water and stir together.
- Mix cornstarch mixture into cooked strawberries; stirring constantly until thick and clear.
- Remove from heat and let cool very slightly.
- Add the remaining strawberries to cooked mixture and stir LIGHTLY to cover all strawberries.
- Pour into pie crust and let cool. Then refrigerate.
- Serve with whipped cream if desired.
