    List of Ingredients




    Orange Popovers

    Olive oil cooking spray
    1 cup unbleached white flour
    2 teaspoons freshly grated orange zest
    2 teaspoons poppy seeds, or
    1 teaspoon ground cinnamon
    1/2 teaspoon salt
    1 cup room temperature skim milk
    3 lightly beaten egg whites, or substitute equal to same
    1 tablespoon extra light virgin Olive or vegetable oil

    Spray muffin tins with nonstick coating.
    Preheat oven to 450 deg. F.
    Place the dry ingredients (the first 5 ingredients) in a mixing bowl
    and make a well in the center and add the milk, egg whites, and oil.
    Whisk just to mix.
    The batter should be the consistency of heavy cream; add a little more milk
    if necessary.
    Pour the batter into the tins, filling each 1/3 - 1/2 full.
    Bake for 15 minutes without opening the oven door.
    Lower the heat to 350 deg. F.
    continue baking for 30 minutes, or until the popovers are puffed and
    well-browned.
    Unmold and serve at once.
    Makes 6 to 8 popovers.
