    2 large sweet potatoes
    1 cup packed brown sugar
    1 cup plain yogurt
    1/2 cup orange juice, not concentrate
    3 large eggs
    1 teaspoon vanilla extract
    1/2 teaspoon salt
    1/4 teaspoon ground cinnamon
    1 pie crust

    Recipe



    Preheat oven to 400 degrees F.
    Pierce the sweet potatoes with a fork.
    Microwave on high until tender. With a full sized microwave,
    this should take approximately 10 minutes.
    Peel the skins off and discard.
    Place the remaining insides of the potatoes into a blender/food
    processor. Blend until smooth. Pour into a large bowl.
    Add remaining ingredients and whisk together until smooth.
    Pour into the crust.
    Bake for approximately 50 minutes, until the filling puffs
    around the edges and a tester comes out clean from the center.
    Allow to cool.
    Then refrigerate for at least 3 hours before serving.
    Makes 1 pie/8 servings.

    May be topped with whipped cream and toasted nuts.
