    Braised Pork With Spanish Rice

    1 1/2 lbs. skinless, boneless pork, all fat cut off
    1/2 - 3/4 c. chopped onion
    1/2 c. chopped green pepper
    1/2 c. chopped red pepper
    1/2 c. chopped yellow pepper
    1/2 c. chopped celery
    1 28oz. can chopped or diced canned tomatoes, undrained
    1 c. water
    1 tsp. salt
    ground black pepper to taste
    1 tsp. paprika
    2 tsp. sugar
    1 c. uncooked long grain rice

    Recipe



    Wipe meat with damp cloth.
    In a heavy skillet (preferably cast iron), brown meat slowly on both sides. No added fat is necessary.
    Add onion, green/red/yellow peppers, celery, tomatoes, water, salt, black pepper, paprika and sugar to skillet.
    Turn heat to low. Cover and simmer 30 minutes.
    Add rice and simmer, covered, 30 - 40 minutes longer, until meat and rice are very tender.
    If you wish, you may remove the meat and put the rice into the liquid and cook, and then put the meat back on top to heat.
    Makes 4 servings.
