    Ham Steak Bigarade

    for ham:
    1 1/2 pounds ham steak, 3/4 inch thick
    1 teaspoon Kitchen Bouquet or Gravy Master browning sauce

    for sauce:
    1 c. orange juice
    1 tbsp. butter
    1/3 c. orange marmalade
    1/4 tsp. ginger
    1 tbsp. cornstarch

    for ham:
    Trim excess fat from steak and score edges.
    Brush evenly on all sides with browning sauce.
    Brown ham on both sides in 1 tablespoon cooking oil.
    Remove to heated platter and keep warm.

    for sauce:
    Mix sauce ingredients together in the ham pan.
    Cook until sauce thickens--about 5 minutes.
    Place the ham back in the pan; cover and continue
    cooking over moderate heat 10 minutes longer.
    To serve, cut into 1/2 inch slices across the grain.
    Makes 4-6 servings.
    Serve with creamed corn.
