    Ham + Cauliflower Au Gratin

    10 ounces frozen cauliflower, thawed
    ...and well drained or 4 cups fresh
    ...partially cooked
    1 1/4 cups smoked ham, fully cooked, chopped
    11 ounces condensed cheddar cheese soup
    1/4 cup milk
    2/3 cup buttermilk baking mix
    2 Tbs. unsalted butter
    2 Tbs. shredded Cheddar cheese
    1/2 tsp. ground nutmeg
    1/8 tsp. paprika

    Heat oven to 400 degrees F.
    Arrange cauliflower in an ungreased 11x7 inch baking dish.
    Sprinkle with ham.
    Beat soup and milk with hand beater until smooth.
    Pour over ham.
    Mix remaining ingredients, except paprika, until crumbly.
    Sprinkle over soup mixture.
    Sprinkle with paprika.
    Bake 20-25 minutes, until topping is golden brown.
    Serves 8 people.
