    List of Ingredients




    1 pound boneless pork loin, cut into 3/4 inch cubes
    1 to 2 tablespoons taco seasoning mix
    2 teaspoons light Olive oil
    1, 8 ounce bottle chunky salsa,
    ...mildness to your preference
    1/3 cup peach preserves

    Recipe



    Heat the oil in a large nonstick frying pan.
    Add the pork and sprinkle with the taco mix.
    Saute over a medium/high heat, until browned.
    Stir in the the salsa and preserves. Cover.
    Lower the heat and simmer for 15 - 20 minutes.
    May be served over noodles or rice, if desired.
    Makes 4 servings.
