Pork Roast w/Herb Gravy
3-1/2-lb loin of pork
1 tablespoon finely chopped onion
2 tablespoons flour
1 teaspoon salt
1/8 teaspoon pepper
1 teaspoon dried sage leaves
1/4 teaspoon dried thyme leaves
1/4 teaspoon dried oregano leaves
1/4 teaspoon liquid gravy seasoning
Heat oven to 325 degrees F.
Wipe pork with damp paper towels.
Place pork, fat side up, in shallow roasting pan.
(Omit rack; pork will rest on bones.)
Insert meat thermometer into center of meaty part of pork;
it should not rest against bone.
Roast 2 1/2 to 3 hours, or to 185 degrees F. on meat thermometer.
Remove to heated platter; keep warm.
Pour off fat from pan (leaving any meat juices in pan).
Return 1 tablespoon fat to pan.
Add onion.
Saute, stirring and over direct heat, about 3 minutes, or until onion is golden.
Remove from heat.
Stir in flour, to form a smooth mixture.
Stir in rest of ingredients.
Gradually add 1 1/2 cups water.
Bring to boiling, stirring mixture will be thickened and smooth.
Reduce heat; simmer 2 minutes.
Serve gravy with pork.
Makes 6 to 8 servings.
