Pork with Cider Sauce

1 1/2 lbs. lean boneless pork, cut into 1" cubes
1/3 c. flour
1/3 c. vegetable oil
1 1/2 c. apple cider
2 sliced carrots
1 small sliced onion
1/2 tsp. rosemary
1 bay leaf
1 tsp. salt
1/2 tsp. pepperRecipe
Preheat oven to 325.
Thoroughly dredge the cubes in the flour.
Heat oil in a large frying pan until hot.
Add the pork and brown on all sides. Drain the cubes on paper towels, then place in a casserole dish.
Drain the oil from the frying pan.
Pour the cider in, heat and stir to remove any pieces in the bottom of the pan.
Add the carrots, onion, rosemary, bay leaf, salt, pepper and hot cider to the casserole.
Cover and bake for 2 hours, until the meat is tender.
Remove the bay leaf and serve.
Makes 4 servings.
