    Sausage Zucchini Boats

    List of Ingredients




    4 med. zucchini squash
    1/4 lb. bulk sausage
    1/4 c. chopped onion
    1/2 - 3/4 c. fine cracker crumbs
    dash garlic powder
    pepper to taste
    1/4 tsp. salt
    1 slightly beaten egg
    1/4 tsp. thyme
    1/4 c. + 1/4 c. freshly grated parmesan cheese, divided

    Preheat oven to 400. Coat a 9x13x2" baking pan with non stick cooking spray.
    Trim the stem and blossom ends off the zucchini.
    Cook in boiling water for 7 - 10 minutes, just until crisp tender. Drain.
    Cut each squash in half lengthwise.
    Carefully spoon out the pulp, leaving the shell intact.
    Mash the pulp and drain. Set aside.
    Brown the sausage and onion together and drain.
    Combine the mashed pulp, the sausage + onion mixture, cracker crumbs, garlic, pepper, salt, egg, thyme and 1/4 c. of the cheese.
    Fill the squash boats with this mixture and place in the baking pan.
    Bake for 20 minutes.
    Sprinkle the other 1/4 c. of the cheese on the tops and place under the broiler for a minute or two.
    Makes 4 servings.
