    Sweet Roasted Pork

    Sweet Roasted Pork

    1 tsp. + 1 tsp. olive oil, divided
    1/3 c. chopped shallots
    1 tbsp. minced garlic
    2 c. coarsely chopped seedless red grapes
    2 tbsp. tamari sauce or soy sauce
    2 tbsp. honey
    1 tsp. grated peeled fresh ginger
    dash five spice powder
    1 1/4 lbs. pork tenderloin, trimmed of fat
    1/2 tsp. salt
    1/2 tsp. ground black pepper

    Preheat oven to 450.
    Heat 1 tsp. of the oil in a medium saucepan over a medium heat.
    Add the shallots and garlic and saute for 3 minutes or until tender.
    Add the grapes, soy sauce, honey, ginger and spice powder.
    Bring to a boil. Reduce heat, and simmer for 15 minutes. Let cool for 10 minutes.
    Then place the mixture in a blender/processer and blend until smooth.
    Heat the other tsp. of the oil in a large heavy frying pan, over a medium/high heat.
    Sprinkle the pork with the salt and pepper.
    Add the pork to the pan and cook for 5 minutes, browning on all sides.
    Insert a meat thermometer into the thickest portion of the pork.
    Bake for 12 minutes or until the thermometer registers 155 degrees.
    Cover with foil, leaving a little space between the foil and roast and let stand for 10 minutes before slicing. Serve with sauce.
    Makes 4 servings.
