1 tablespoon vegetable oil
1 medium chopped onion
2 chopped garlic cloves chopped
2 chicken bouillon cubes
1/2 cup bottled honey barbecue sauce
1/2 cup water
1, 4 pound chicken, cut in quarters, skin removed,
...or just use your favorite pieces
1/4 teaspoon salt
1/8 teaspoon ground black pepper
Recipe
In a 5 - 7 quart cooker, heat oil over medium heat. Add the onion,
garlic, and bouillon. Cook until softened, about 2 minutes. Stir in the
barbecue sauce and water; add the chicken, leg quarters
first, then the breasts, meaty side up.
Lock lid in place and bring to high pressure, cook for 10
minutes. Quick release the pressure. Transfer the chiken to
an oiled broiler rack, season with salt and pepper. Bring cooking
liquid to boil, cook about 5 minutes, stirring often. Brush
the chiken w/the sauce. Broil until glazed, 2 - 3 minutes.
Turn, brush with sauce and broil until glazed.
Makes 2 - 4 servings.
Serve hot w/sauce on the side if desired.
