    Chocolate Pudding, rich

    2 c. milk
    1/3 c.granulated white sugar
    1/3 c. unsweetened cocoa powder
    3 tbsp. cornstarch
    1 tsp. chocolate extract, or vanilla
    1 c. frozen light whipped topping, thawed

    In saucepan, whisk together milk, sugar, cocoa powder
    and cornstarch.
    Bring to boil for 1 minute, stirring.
    Remove saucepan from heat. Stir in chocolate extract.
    Transfer to medium bowl; set in large bowl filled with
    ice water.
    Stir pudding with spatula until cold, about 4 minutes.
    Remove from ice bath; fold in topping.
    Spoon into bowls.
    Garnish each with dollop of topping.
