    List of Ingredients

    Orange Pudding w/Meringue

    3 c. milk
    3 eggs, yolks and whites separated
    3 tbsp. + 1 c. white granulated sugar
    1 tsp. lemon extract
    1 tsp. vanilla
    3 tbsp. cornstarch
    6 to 8 oranges, sectioned apart
    3 tbsp. powdered confectioners sugar
    1/4 tsp. cream of tartar

    Preheat oven to 300. Need 1 quart baking dish.
    Place milk in double boiler and warm.
    Add the 3 tbsp. of white granulated sugar to egg yolks and blend together. Add to milk, stirring constantly.
    In another bowl, blend cornstarch with a little water until smooth. Strain, if needed and add to mixture in double boiler, stirring constantly until thick; cool.
    Add lemon and vanilla.
    Place the orange sections in bottom of the baking dish.
    Sprinkle the 1 c. white granulated sugar over oranges.
    Pour cornstarch pudding over oranges.
    Beat egg whites, confectioners sugar and cream of tarter together to make a meringue. Cover pudding with meringue.
    Brown in oven, watching carefully until browned.
