    List of Ingredients




    for the base:
    1 c. sifted flour
    1/4 tsp. salt
    2 tbsp. sugar
    1/2 c. softened butter

    for the topping:
    4 c. diced rhubarb
    1/4 c. + 1/3 c. cold water
    1 1/4 c. sugar
    2 envelopes unflavored gelatin
    red food coloring, optional
    2 c. frozen whipped topping, thawed or cream (16oz.-pint)

    Preheat oven to 350. Grease a 9x9x2" pan.

    for the base:
    Combine flour, salt and sugar together.
    Cut in butter until mixture resembles coarse bread crumbs.
    Spread evenly in bottom of pan and bake about 10 minutes, until lightly browned, about 10 minutes.
    Let cool.

    for the topping:
    Combine rhubarb, the 1/4 c. cold water, sugar and salt.
    Simmer until rhubarb is tender, stirring occasionally.
    Soak gelatin in the 1/3 c. cold water.
    Add hot rhubarb and stir until dissolved.
    Add food coloring, if desired.
    Chill until partially set, then fold in whipped topping.
    Pour onto cooked base and chill until firm, about 3 hours.
    Serves 9.
