Rhubarb Bites

Rhubarb Bites
2 c. diced rhubarb
1/2 c. + 1/2 c. granulated white sugar, separated
1/2 c. shortening
1 c. light brown sugar
1 egg
1 tsp. baking soda
1/4 tsp. salt
1 tsp. cinnamon
2 c. flour
1/2 tsp. vanilla
powdered confectioners sugar
Preheat oven to 350. Grease and flour a 13x9x2 inch baking pan.
Mix together the rhubarb and 1/2 c. of the white sugar. Set aside.
Cream the shortening, the remaining 1/2 c. of the white sugar and brown sugar together.
Add the egg and mix well.
Stir in baking soda, salt, cinnamon and flour.
Stir in the vanilla, and then the rhubarb mixture.
Pour the batter into the baking pan and bake for 40 - 45 minutes.
Let cool, sprinkle with some confectioners sugar and cut into 2" squares.
