Rhubarb Crisp #1
2 1/2 c. quick cooking oats
2 1/2 c. packed brown sugar
1/3 c. melted butter
9 c. chopped rhubarb
3 tsp. cinnamon
2 c. water
2 c. white granulated sugar
1/4 c. cornstarch
2 tsp. vanilla extract
Preheat oven to 350. Grease a 9x13x2" baking pan.
Mix oats, brown sugar, flour and butter together.
Pour 1/2 of mixture into the bottom of pan.
Place rhubarb over the mixture and sprinkle with cinnamon.
In medium saucepan cook water, white sugar, cornstarch and vanilla over medium heat until thick. Let cool slightly.
Pour over rhubarb and sprinkle remaining oats/flour mixture on top.
Bake for 30 - 35 minutes.
Makes 4 - 6 servings.
