    Rhubarb Pork Chop Casserole

    4 pork chops
    1 tbsp. cooking oil
    salt and pepper to taste
    2 1/2 - 3 c. bread crumbs
    3 c. chopped rhubarb
    1/2 c. brown sugar
    1 tsp. cinnamon
    1/4 c. flour

    Recipe



    Preheat oven to 350. Need a 9x13x2" baking dish.
    In a heavy frying pan, brown the pork chops in oil.
    Sprinkle with salt and pepper and remove to a warming platter.
    Mix 1/4 c. of the pan drippings with the bread crumbs. Save 1/2 c. and set aside.
    Sprinkle remaining crumbs into baking dish.
    Combine rhubarb, sugar, flour and cinnamon together and spoon half over the bread crumbs.
    Arrange chops on top of that.
    Spoon remaining rhubarb mixture over top of the chops.
    Cover with foil and bake 30 minutes.
    Remove foil, sprinkle with the remaining crumbs and bake an additional 15 minutes.
