Rhubarb Stir Cake

1/4 c. softened butter, (1/2 stick)
1 1/2 c. + 1/3 c. white granulated sugar
1 large egg
1 tbsp. vanilla
2 1/3 c. flour
1 3oz. pkg. cook type vanilla pudding mix
1 tsp. baking soda
1/2 tsp. salt
1 c. sour cream
4 c. chopped rhubarb, in 1/2" pieces
1/2 tsp. cinnamon or nutmegRecipe
Preheat oven to 350. Grease a 13x9x2" baking dish/pan.
Stir flour, pudding mix, baking soda, and salt together. Set aside.
Using a large bowl, cream together the 1 1/2 c. of the butter and sugar.
Beat in the egg and vanilla.
Gradually stir the dry ingredients into the butter mixture.
Fold in the sour cream and rhubarb.
Pour the batter into the baking dish/pan.
Stir together the 1/3 c. of the white sugar and cinnamon. Sprinkle over top of the batter.
Bake for 40 minutes or until tester comes out clean.
Makes 12 servings.
Variation: Substitute 1/4 of the rhubarb for fresh sliced strawberries to make a Strawberry Rhubarb Cake.
