Rhubarb Tapioca

List of Ingredients
1 pint chopped rhubarb
24 cooked prunes
1/4 c. prune juice
1/2 c. sugar
1/2 c. quick cooking tapioca
1 tsp. vanilla
3/4 c. cold water
whipped topping of choiceRecipe
Soak tapioca in cold water for 30 minutes. Drain and set aside.
To the chopped rhubarb add the cooked prunes, prune juice and sugar.
Boil for 5 - 10 minutes.
Then add the tapioca and vanilla. Cook until tapioca looks transparent.
Serve either hot or cold with whipped topping.
