    Split Layer Rhubarb Cake

    1 c. flour
    1 tsp. baking soda
    1 c. flaked coconut
    1 c. oatmeal
    5/8 c. butter
    1 c. brown sugar
    1 beaten egg
    1/2 - 3/4 c. rhubarb jam
    powdered confectioners sugar

    Recipe



    Preheat oven to 350. Grease one 10" tube pan.
    Stir together the flour, baking soda, coconut, and oatmeal together in a bowl.
    Cream butter and sugar together.
    Add egg and mix well.
    Combine dry mixture and butter mixture and blend well.
    Pour 2/3 of the batter in the pan.
    Spread the rhubarb jam over the batter.
    Spoon the remaining dough over top of the rhubarb.
    Bake for 35 - 45 minutes.
    Cool in pan for 10 minutes, then invert onto serving plate.
    Sprinkle with confectioners sugar and let cool.
