Herbed Rice #3, w/mushrooms
1 3/4 cups water
1 cup short grain rice
1 cup chopped onion
1 tablespoon Olive oil
2 tablespoons butter or substitute
1 cup diced celery
1 cup freshly/thinly sliced mushrooms
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons freshly minced basil
2 teaspoons freshly minced oregano
2 teaspoons freshly minced parsley
2 teaspoons freshly minced thyme
2 teaspoons freshly minced verbena
4 teaspoons freshly minced lemon thyme
...(or 2 tablespoons of any combination of above)
1 teaspoon freshly snipped rosemary
Use a medium saucepan to boil water for the rice.
Stir in rice.
Bring to boil again.
Cover and simmer 15 minutes, or until the liquid is absorbed.
Remove the heat and let set, covered, for 5 minutes.
Use a large frying pan to saute onion in the oil and
butter for about 3 minutes.
Add the celery, mushrooms, salt, and pepper.
Saute 1 minute more or until vegetables are tender.
Remove from heat and stir in the rice, and remaining
ingredients until just combined.
Makes 6 servings.
