The truth is that both are actually red/orange.
Spanish rice is also made with tomato sauce or paste.
Mexican version has cumin, bell pepper, onions, and chicken stock
whereas the Spanish version does not add cumin but insteads has
saffron. Saffron turns the rice a red/orange color.
For yellow rice, use turmeric.
For green rice, use dill weed.
For red rice, tomatoes and or tomato sauce.

Mexican/Spanish Rice #1, simple
2 cups of uncooked long grain rice 1 can of tomato sauce
2 cans of chicken broth 1 tablespoon of garlic salt
1 cup of water 1 teaspoon of cumin
1 small onion minced 2 tablespoons of cooking oil
Brown rice in oil on med-high heat.
Add onions and tomato sauce. Mix well but don't over mix!
Add chicken broth, water, garlic salt and cumin.
Taste for appropriate seasoning (everyone is different!)
Bring to a boil, cover and simmer on med-low heat for about 20 min or until
all the water is gone.
