    Pineapple Rice #5, pilaf

    1 1/2 tablespoons butter
    1 1/2 cups uncooked long-grain white rice
    1/2 teaspoon curry powder
    1 can (14 1/2 ounce) reduced sodium, fat-free chicken broth
    1 can (8 ounce) crushed pineapple, undrained
    1/2 cup toasted slivered almonds
    1/2 cup sliced green onions
    Salt and pepper, to taste

    Melt butter in medium saucepan over medium heat. Mix in rice and
    curry powder; cook and stir about 5 minutes or until rice is lightly
    browned. Stir in broth and pineapple. Bring to a boil; reduce heat
    to low. Cover and simmer 15 minutes. Turn off heat; set aside 5
    minutes. Mix in almonds and green onions. Season with salt and
    pepper.
    Servings: 6

    Preparation Time: 15 minutes
    Cook Time: 30 minutes
