    This recipe is thick and creamy. You may want to double it.

    List of Ingredients




    2 tbsp. unsalted butter
    1/2 c. medium or short grain white rice
    4 c. milk
    pinch salt
    1/2 c. sugar
    1 tsp. vanilla extract

    Recipe



    Preheat oven to 300. Will need a 9" baking pan or casserole dish.
    Heat butter in a 4 quart. saucepan.
    When butter is frothy add rice and cook for a minute.
    Slowly add milk, salt, sugar, vanilla, and bring just to under a boil.
    Transfer to the casserole dish and set in oven.
    Bake uncovered for 1 1/2 hours stirring every 15 minutes.
    Then bake for 30 minutes, undisturbed.
    Stir again and cook undisturbed for 30 more minutes.
    Total baking time is 2 1/2 hours.

    **Try adding heavy cream in the last half hour of baking.
    **For a crusty topping, reduce sugar in recipe to 1/4 c. Mix 1/4 c. brown sugar and 2 tbsp. butter together.
    When the pudding is out of the oven, sprinkle with sugar mixture and put under broiler until melted and bubbly.
