    This rice is really delicious! May be served as is for a side dish, or add some cooked chicken or other meat for a one dish
    meal. White rice may be used in place of the brown rice; cooking 20 minutes instead of 40.

    List of Ingredients




    1 tsp. vegetable oil
    1 minced garlic clove
    1/4 tsp. ground ginger
    1/2 c. diced red bell pepper, (1/2 med. sized)
    1 c. brown rice
    2 c. low sodium chicken broth
    1 tbsp. low sodium soy sauce
    2 tsp. firmly packed dark brown sugar
    1/8 tsp. crushed hot red pepper flakes, more or less to taste
    1/3 c. chopped scallion for garnish, if desired

    Recipe



    Heat the oil in a medium saucepan over a medium heat.
    Add the garlic and ginger and cook for 1 minute.
    Add the bell pepper and cook for 1 minute.
    Stir in the brown rice and broth.
    Bring to a boil. Reduce heat to low.
    Cover and simmer until the liquid is absorbed, approximately 40 minutes.
    Use a small bowl to combine the soy sauce, brown sugar and red pepper flakes and mix well.
    Add the soy sauce mixture to the rice mixture.
    Continue to cook, stirring constantly, for 1 minute.
    Place the rice in a serving dish and sprinkle the chopped scallions over the rice.
    Makes 4 servings.
