    Cabbage + Pasta Salad, creamy

    Cabbage + Pasta Salad, creamy

    1 1/2 c. uncooked corkscrew macaroni (can use other shaped macaroni's too)
    1/2 c. plain low fat yogurt
    1/3 c. reduced calorie creamy Italian salad dressing
    1 tbsp. grated Parmesan cheese
    1 clove minced garlic
    1 c. shredded cabbage
    1 c. shredded carrots
    1 med. chopped cucumber
    1 med. chopped tomato, (seeded if you wish)
    lettuce, optional


    Cook macaroni to al dente with package directions.
    Drain, rinse under cold running water. Drain well. Set aside.
    In a small bowl stir together yogurt, Italian dressing, parmesan cheese and garlic. Set aside
    In a large bowl toss together macaroni, dressing mixture, cabbage, carrots, cucumber, and tomato.
    Cover and chill.
    Serve on top of lettuce leaves, if desired.
    Makes 6 servings.
