Cucumber Salad, molded
2 cucumbers
1 small onion
1 small pkg lemon or lime Jello
1 8 oz pkg cream cheese
1/4 C Mayonnaise (Hellman's if possible)
Chop the cucumbers fine (unpeeled if using kirby cukes) and sprinkle
with salt.
Leave for about 10-15 minutes then drain.
Mix together the jello and 2 cups boiling water. Break up cream
cheese in this
and add the mayo.
Beat until frothy, add the cucumbers and onion. (I sometimes add
chopped pimiento
for color) Pour into oiled mold.
It's pretty unmolded on a pedestal cake plate with black olives and
cherry tomatoes
alternating around it. (I've also used mandarin orange slices and
fresh cherries)
