    Potato Salad, Danish

    Potato Salad, Danish

    4 - 5 large potatoes, boiled in their skins
    4 tbsp. olive or vegetable oil
    4 tbsp. tarragon vinegar
    1 tsp. salt
    1 tsp. sugar
    1 clove crushed garlic
    3 chopped green onions
    6 - 8 thinly sliced radishes
    1/4 c. mayonnaise
    1 tsp. dried dill or 1 tbsp. fresh chopped
    parsley for garnish
    3 hard cooked eggs for garnish

    Do not overcook the potatoes.
    When cool enough to handle, peel and cut into 1/2 inch cubes.
    Mix the oil, vinegar, salt, sugar and garlic together.
    Pour over the potatoes, toss gently and chill.
    When ready to serve, combine the onions and radishes with the potatoes.
    Mix the mayonnaise with dill and fold into the salad.
    Garnish with parsley and hard cooked egg wedges.
    Makes 6 servings.
