    Pepper Cabbage

    List of Ingredients

    4 c. shredded cabbage
    1 med. shredded green bell pepper
    1/2 small shredded onion, optional
    1 small shredded carrot, optional
    2 tbsp. cider vinegar
    1/3 c. sugar
    1/4 tsp. ground black pepper

    Recipe

    Stir the sugar and vinegar together in a small bowl to
    dissolve as much of the sugar as possible.
    Add the vegetables and pepper into the vinegar mixture and toss.
    Refrigerate for at least 1 hour to soften vegetables a bit.
    Stir frequently.
    Store in a covered container in refrigerator.

    *Note- you can use a commercial cole slaw mix in place of
    the vegetables as it already contains the cabbage and carrot.
    You would just need to add the green pepper onion to it.
