    Potato Salad # 9, w/Bacon + Onion

    Potato Salad #9, w/Bacon + Onion

    6 bacon strips
    2 lbs. small (new work great)
    1/4 c. chopped onion
    3 tbsp. chopped parsley
    1 tbsp. wine or herb vinegar
    3 tbsp. vegetable oil
    1/2 c. sour cream
    salt and pepper to taste

    Fry bacon to desired crispness, drain, and cut or crumble
    and set aside.
    In a saucepan, place potatoes in salted COLD water with
    just enough water to cover. Bring to a boil and cook 20
    to 25 minutes or until tender; drain and cool. Peel potatoes,
    cut into 1/4" slices, and place in a mixing bowl.
    Add onion, parsley, and half of the bacon, toss gently.
    Combine vinegar, oil, sour cream, salt, and pepper. Add to
    potatoes and toss.
    Cover and chill at least 4 hours. Garnish with remaining
    bacon and serve.
    Serves 6 - 8.
