    Bacon Tomato Sandwich with Cheddar

    List of Ingredients




    8 slices bacon
    4 onion flavored buns, split
    1/3 c. salad dressing or mayonnaise
    1 tbsp. country style Dijon mustard
    4 slices ripe tomato
    12 red onion rings, not slices, but rings
    12 slices cucumber
    eight 2 1/4x1x1/8" strips Cheddar cheese

    Recipe



    Heat oven to 375.
    Fry or microwave bacon to desired crispness.
    Place the split onion buns on cookie sheet.
    In small bowl stir together the mayonnaise and mustard.
    Spread each 1/2 of bun with about 1 tbsp. of the mustard mixture.
    On the bottom half of each bun, place 1 tomato slice, 3 onion rings, and 3 cucumber slices.
    Crisscross 2 bacon strips over top of the cucumber slices.
    Crisscross 2 slices of the cheese over the bacon.
    Bake or broil for 3 to 5 minutes or until the cheese is melted.
    Top with remaining bun and serve.
    Makes 4 servings.
    NOTE: Don't bake too long or the buns can over brown on the bottom side.
