Chicken, Bacon + Cheese Melt
2 tablespoons butter
1 tablespoon flour
1 cup milk or light cream
1/8 teaspoon ground nutmeg
1 dash cayenne
1 teaspoon salt
1/8 teaspoon ground black pepper
3/4 cup grated American cheese
4 slices toasted bread of choice
4 slices, 1/4 inch thick, cooked white meat of chicken
8 slices bacon, fried crisp and drained
1/4 cup grated Parmesan cheese
Heat butter in medium saucepan.
Whisk in flour and cook 1 minute.
Gradually add milk, stirring as adding.
Cook slowly, stirring, until thick and smooth.
Mix in cayenne, salt, pepper, and cheese.
Cook slowly until cheese melts.
Place each slice of toast in a small oven proof dish or
place them all on 1 cookie sheet.
Place a slice of chicken on each, then 1/4 of the sauce.
Top each with 2 slices bacon and 1 tablespoon grated
cheese.
Broil about 5 minutes until bubbly and golden.Recipe
