    List of Ingredients




    1 tbsp. olive oil
    3/4 c. chopped onion
    curry spice blend from recipe below
    1 c. cream
    1 1/4 c. roughly chopped red potatoes, (2 baby sized)
    1 1/4 c. chopped fresh roma tomatoes, (approx. 2)
    2 c. broccoli florets
    1 c. sliced carrots, (2 medium )
    1 c. cauliflower florets
    10 wheat or garlic herb pita bread
    5 c. cooked rice

    Curry Spice Blend:

    1 tbsp. curry powder
    2 tsp. ground cumin
    2 tsp. turmeric
    1/2 tsp. ground thyme leaves
    3/4 tsp. salt
    1/4 tsp. pepper
    Mix all the ingredients together.

    Heat pitas, and set aside on a warming tray.
    Heat oil over a medium heat and cook the onion till tender, about 5 minutes.
    Add all of the curry spice and blend until fragrant, about 1 minute.
    Add the cream and bring to a boil.
    Add the potatoes and tomatoes. Cover and simmer until the potatoes are almost fork tender, about 12 minutes.
    Add the broccoli, carrots and cauliflower. Cover and simmer until tender, stirring occasionally, about 5 minutes.
    Season with salt and pepper.
    Divide rice among the heated pitas.
    Top with the curry vegetables.
    Fold the sides of the pita in towards the center, then roll up.
    Makes 10 servings.
