Roast Beef Swiss Sandwiches, open face
1 teaspoon butter
1 green bell pepper cut up
1, 7 ounce jar whole mushrooms drained
1/2 pound deli style roast beef
salt and pepper
2 slices Swiss cheese
2 - 4 bread slices
Melt butter in pan over medium heat.
Add bell pepper cover for 3 minutes.
Add mushrooms cover and continue cooking until
peppers are at desired tenderness.
Add the roast beef.
Season with salt and pepper.
Cover and cook for 5 minutes stiring occasionally.
Lay cheese on top. Cover & let melt about 1 minute.
Place on 2 slices of bread. May top each with
another slice of bread or serve as is.
Makes 2.
Serve with salad.
