Creamy Seafood Sauce

This quick, easy sauce is excellent with your favorite cooked seafood, sauted chicken, on fat slices of French bread, and even over pasta. Very versatile!
List of Ingredients
1 tbsp. butter
2 finely chopped shallots
1 tbsp. flour
3/4 c. tomato juice
1/2 c. milk
2 tbsp. sherry wine or apple juice
1/2 c. cream
Recipe
Melt butter and saute the shallots.
Stir in the flour.
Then add the tomato juice and milk, stirring quickly.
Bring to a boil, still stirring and simmer for 1 minute.
Stir in sherry and cream.
Makes 4 servings.
