Sweet Pepper Sauce
2 medium red bell peppers
12 fresh basil leaves -- (12 to 15)
OR
2 teaspoons dried basil leaves
8 whole pitted Kalamata or ripe olives, optional
1 clove garlic
1 tablespoon balsamic or cider vinegar
1/8 teaspoon salt
1/8 teaspoon pepper
Cut bell peppers lengthwise in half; remove stems and
seeds. Saute with a little Olive oil until skin is browned.
Place peppers in paper or plastic bag and let cool.
Remove and discard skins. Place peppers and remaining
ingredients in blender/food processor. Cover and process
about 1 minute or until smooth. Cover and let stand until
ready to use. Makes about 1 cup.
